Get an inside look at the craft of creative food design and learn the art of out-of-the-box decadent desserts. With a combination of class participation and chef demonstration we will compose a four course meal entirely of desserts.

Course 1 – amuse – spaghetti squash with vanilla cream and walnut
Course 2 – appetizer – banana scallop with peanut butter cream and fried fennel
Course 3 – salad – fromage blanc with braised and fresh summer fruits and arugula with exotic fruit gel
Course 4 – entree – Madagascar chocolate mousse with parsnip vanilla cremeux, sandy hazelnuts, fried sweet potatoes and cherry balsamic sauce
